Pick up cooked shrimp in the seafood section at the grocery, and this is done in no time!
Serve as an appetizer on its own or as a dip with chips! The jalapeno makes it spicy, so skip it if needed!
Zesty Lime Shrimp & Avocado Salad
The lime juice, shrimp & avocado combo in this dish takes me back to our last Caribbean vacation!🏝 A zesty & refreshing salad that is a breeze to put together!
Ingredients
- 1/4 c red onion - diced fine
- 2 limes - juiced
- 1 tsp olive oil
- 1/4 tsp kosher salt
- 1 lb. cooked shrimp - tails removed & chopped (or frozen thawed)
- 1 medium tomato - diced (or 1/2 pint of cherry tomatoes -halved)
- 1 medium Hass avocado - diced
- 1 TBSP chopped Cilantro
- Optional: 1 jalapeno (seeded & diced fine)
Directions
- Step 1 To cook thawed shrimp, simply drizzle shrimp with olive oil, salt & pepper on a sheet pan and roast for 10 minutes at 400 degrees. Cool & chop before combining with veggies
- Step 2 In a small bowl, combine red onion, lime juice, olive oil & salt/pepper. Let marinate for at least 5 minutes to mellow flavor of onion.
- Step 3 In a large bowl, combine chopped shrimp, avocado, tomato & jalapeno(if using)
- Step 4 Combine all ingredients together, add cilantro & gently toss.
