Are you daydreaming about being in the islands about now? Drinking umbrella drinks and dining on fresh seafood? I am!

The lime juice, shrimp 🍤 & avocado 🥑 in this dish takes me back to our last Caribbean vacation!🏝 This zesty & refreshing salad is a breeze to put together!

Pick up cooked shrimp in the seafood section at the grocery, and this is done in no time!

Serve as an appetizer on its own or as a dip with chips! The jalapeno makes it spicy, so skip it if needed!

The lime juice, shrimp & avocado combo in this dish takes me back to our last Caribbean vacation!🏝 A zesty & refreshing salad that is a breeze to put together!

Ingredients
  • 1/4 c red onion - diced fine
  • 2 limes - juiced
  • 1 tsp olive oil
  • 1/4 tsp kosher salt
  • 1 lb. cooked shrimp - tails removed & chopped (or frozen thawed)
  • 1 medium tomato - diced (or 1/2 pint of cherry tomatoes -halved)
  • 1 medium Hass avocado - diced
  • 1 TBSP chopped Cilantro
  • Optional: 1 jalapeno (seeded & diced fine)
Directions
  • Step 1 To cook thawed shrimp, simply drizzle shrimp with olive oil, salt & pepper on a sheet pan and roast for 10 minutes at 400 degrees. Cool & chop before combining with veggies
  • Step 2 In a small bowl, combine red onion, lime juice, olive oil & salt/pepper. Let marinate for at least 5 minutes to mellow flavor of onion.
  • Step 3 In a large bowl, combine chopped shrimp, avocado, tomato & jalapeno(if using)
  • Step 4 Combine all ingredients together, add cilantro & gently toss.
