Lemon Butter Garlic Shrimp & Asparagus

In this easy Sheet Pan dinner, asparagus and shrimp are tossed with oil & spices, roasted in the oven, & finished by a butter & lemon sauce to complete the dish!!

In this easy Sheet Pan dinner, asparagus & shrimp are tossed with oil & spices, roasted in the oven, & finished by butter & lemon to complete the dish!

Ingredients
  • Asparagus:
  • 1 bunch of Asparagus, ends trimmed
  • 1 TBSP olive oil
  • 1 TSP garlic - minced
  • 1/4 TSP salt
  • 1/8 TSP pepper
  • Shrimp:
  • 1 lemon - cut into 4 wedges
  • 1 LB large uncooked peeled shrimp - thawed & deveined
  • 2 TSP garlic - minced
  • 1 TBSP olive oil
  • 1/2 TSP salt
  • 1/4 TSP paprika
  • 1/8 TSP pepper
  • 1/8 TSP red pepper flakes (optional)
  • 2 TBSP butter - cubed
Directions
  • Step 1 Preheat oven to 400 degrees
  • Step 2 Line a sheet pan with non-stick aluminum foil, add trimmed asparagus to one end of pan. Drizzle with olive oil, add 1 TSP minced garlic, 1/4 TSP salt & 1/8 TSP pepper. Toss until even coated on pan.
  • Step 3 Roast 5 minutes – while cooking, remove tails from shrimp and combine salt, pepper, paprika & red pepper flakes. Set aside.
  • Step 4 Remove asparagus from oven and add shrimp to pan. Drizzle with 1 TBSP olive oil, add spice mixture to shrimp and toss on pan until evenly coated in one layer on pan.
  • Step 5 Top asparagus and shrimp with cubed butter – return to oven for 6 minutes, or until shrimp is opaque.
  • Step 6 Remove from oven and squeeze 2 lemon wedges over all.
  • Step 7 Serve with rice or pasta and additional lemon wedges if desired.
