How does this sound?

Farm fresh corn sautéed in butter, complimented by diced bell pepper, red onion & fresh herbs – it’s the flavor of Summer! And the perfect side dish to anything grilled!  Seriously!

Confetti Corn is one of my favorite Ina Garten recipes – so, obviously she wouldn’t steer you wrong! 🙂

Farm fresh corn sautéed in butter, complimented by the addition of bell pepper, red onion & fresh herbs - it’s the official taste of summer!

Ingredients
  • 2 TBSP olive oil
  • 1/2 cup red onion - chopped
  • 1 small orange bell pepper -diced
  • 2 TBSP unsalted butter
  • 5 ears of yellow or white corn - kernels cut from the ears
  • 1 TSP kosher salt
  • 1 TSP freshly ground black pepper
  • 2 TBSP julienned fresh basil, chives and/or parsley
Directions
  • Step 1 Heat olive oil over Medium heat in a large sauté pan
  • Step 2 Add onion & sauté for 4 minutes, until onion is soft. Stir in bell pepper & sauté 2 more minutes.
  • Step 3 Add butter to pan and allow to melt
  • Step 4 Over Medium heat, add corn, salt & pepper to pan and cook, stirring occasionally 5-7 minutes.
  • Step 5 Season to taste, gently stir in herbs & serve hot.
