No overcooked pork in this dish! No way! After a quick sear to the tenderloin, it roasts in the oven with caramelized sliced apples & red onions for only 20 minutes (!) to produce juicy, tender pork goodness! There is always the option to toss it all in the slow cooker! You choose!
The sauce in this dish is made simply with a Pumpkin ale or apple cider. The spices in the ale really add a lot of flavor, but apple cider is a great substitute.

Apple Pork Tenderloin

2 lb. pork tenderloin (plain, not marinated)
2 apples – unpeeled, sliced into 1/2” wedges
1 red onion – sliced into 1/2” wedges
3 tbsp olive oil
3/4 tsp kosher salt
1 tsp ground black pepper
1/2 tsp cinnamon
1 cinnamon stick (optional)
1 (12 oz.) pumpkin ale, or apple cider
2 tbsp brown sugar
2 tbsp butter – cut into 4 slices
Directions
- Oven Baked Method
- Preheat oven to 375 degrees. After chopping your apples & onions, mix the salt, pepper & cinnamon together to make a rub for the tenderloin.
- Season pork tenderloin liberally with the rub mixture. Set aside.
- Heat 1 tablespoon of olive oil in a Dutch oven or large oven proof skillet over Medium-High heat. Add the pork tenderloin, searing on each side, at least 1- 1.5 minutes per side. Remove from skillet & set aside.
- Lower heat to Medium & add remaining 2 tablespoons of olive oil. Add the onions and sauté the onions for about 5 minutes.
- Add the apples and continue stir & sauté another 2 minutes. Add cinnamon stick & sprinkle brown sugar. Stir to coat.
- Add pumpkin ale or apple cider to apple & onion mixture to deglaze the pan. Stir for about 1 minute, making sure to scrape the Tasty Bits from the bottom. Remove from heat.
- Place pork tenderloin in center of the skillet on top of apples & onions. Bake for 20 minutes, until internal temperature measures 140-145 degrees.
- Remove from the oven and place slices of butter over the apple mixture. Let the pork rest for 5 minutes in skillet before removing to slice it. Stir apple mixture, and either add pork slice back to pan or serve on a platter, surrounded by the apples, onions & delicious sauce.
- Slow Cooker Method
- Season & sear pork tenderloin as described in Step 2 above. Place in slow cooker.
- Toss the sliced apples & onions with 1 tablespoon of olive oil &
brown sugar. Add mixture around the tenderloin in slow cooker. - Add pumpkin ale or apple cider. Scatter the sliced butter around the pork.
- Cook on High for 2 hours or Low up to 4 hours, checking to insure internal temperature reaches 140-145 degrees.
Notes
- Note: The tenderloin cut of pork only needs to be cooked to 140-145 degrees, unlike other cuts that require 155 degrees to be cooked safely.
- Serving suggestion: We enjoyed this with roasted Brussels sprouts, but it is also delicious served with mashed potatoes!
