This treat is mixed all in ONE bowl, and solves the problem of what to do with ALL.THE.ZUCCHINI!!
Double Chocolate Zucchini Bread
You will never believe that this delicious chocolatey treat includes 1 and 1/2 cups of shredded zucchini! IMO if you can get a serving of vegetables in your dessert, then that is a WIN!!
Ingredients
- 1/2 cup coconut oil or room temperature unsalted butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 eggs
- 1 TSP vanilla extract
- 1 TSP baking powder
- 1/2 TSP baking soda
- 3/4 TSP salt
- 1 3/4 cup Whole Wheat flour or All-Purpose Flour
- 1 1/2 cup grated zucchini
- 1/3 cup cocoa powder
- 1/8 cup hot coffee
- 3/4 cup chocolate chips
- 1/2 cup walnuts - chopped (optional)
Directions
- Step 1 Preheat oven to 350 degrees. Grease a 9×5 loaf pan or line with parchment paper.
- Step 2 Use hand mixer to cream oil or butter in a medium bowl with both sugars until light and fluffy
- Step 3 Add eggs one at a time, beating well between each addition.
- Step 4 Add vanilla, baking powder, baking soda, and salt. Stir until well combined.
- Step 5 Stir in flour, zucchini, cocoa powder, coffee, 1/2 cup chocolate chips, & nuts until well combined.
- Step 6 Pour into prepared loaf pan & sprinkle top with remaining 1/4 cup of chocolate chips. ALLOW LOAF TO REST FOR 20 MINUTES.
- Step 7 Bake for 60 minutes, or until toothpick inserted into the center comes out clean.
