One reason I love Trader Joe’s is that they make it so easy to put a meal together with their products.  With affordable pricing & plethora of cuisine influences, you simply cannot go wrong.

You can prepare this Italian meal so quickly & easily with Trader Joe’s Gnocchi and Pesto Marinated Chicken breasts! In less than 20 minutes, this meal is prepped, cooked, and on the table!

Actually, I hesitate to even call this dish a recipe, because it’s just 4 ingredients. If you are new to cooking, or if you dislike having to think too much about cooking, this meal is for you!

 

If you can boil water, slice a few tomatoes, and heat a skillet – you got this! Check it out! And FYI – leftovers are delish too!

An Italian meal made so quick & easy with Trader Joe’s Gnocchi and Pesto Marinated Chicken breasts. In less than 20 minutes, this meal is prepped, cooked, and on the table!

Ingredients

  • 1 pint cherry tomatoes – halved

  • 2-3 tbsp refrigerated prepared pesto (such as Buitoni)

  • 1 (17.5 oz.) package Trader Joe’s Gnocchi

  • 1 package Trader Joe’s Pesto Genovese Chicken Breast

  • 1 tbsp olive oil

  • Optional: grated Parmesan

  • Optional: fresh chopped basil

Directions

  • Wash tomatoes, & slice in half. Bring a pot of water to boil.
  • Cook gnocchi in boiling water for 3 minutes, per package instructions.
  • While gnocchi cooks, add 1 tbsp olive oil to a large skillet over Medium High heat. Add chicken breasts – cook 4 minutes on each side. Remove from skillet.
  • Add tomatoes to same skillet, and cook 2-3 minutes. Add drained gnocchi when finished cooking.
  • Add 2-3 tbsp prepared pesto to tomatoes & gnocchi. Stir to combine until heated through.
  • Slice chicken and serve over tomato/gnocchi mixture. Garnish with Parmesan cheese and chopped Basil if desired.
