Actually, I hesitate to even call this dish a recipe, because it’s just 4 ingredients. If you are new to cooking, or if you dislike having to think too much about cooking, this meal is for you!

TJ’s Gnocchi and Pesto Marinated Chicken

Ingredients
1 pint cherry tomatoes – halved
2-3 tbsp refrigerated prepared pesto (such as Buitoni)
1 (17.5 oz.) package Trader Joe’s Gnocchi
1 package Trader Joe’s Pesto Genovese Chicken Breast
1 tbsp olive oil
Optional: grated Parmesan
Optional: fresh chopped basil
Directions
- Wash tomatoes, & slice in half. Bring a pot of water to boil.
- Cook gnocchi in boiling water for 3 minutes, per package instructions.
- While gnocchi cooks, add 1 tbsp olive oil to a large skillet over Medium High heat. Add chicken breasts – cook 4 minutes on each side. Remove from skillet.
- Add tomatoes to same skillet, and cook 2-3 minutes. Add drained gnocchi when finished cooking.
- Add 2-3 tbsp prepared pesto to tomatoes & gnocchi. Stir to combine until heated through.
- Slice chicken and serve over tomato/gnocchi mixture. Garnish with Parmesan cheese and chopped Basil if desired.
