Thai Salad with the BEST Peanut Sauce!

Do you know what the most underrated dinner shortcut is? Coleslaw mix!

Case in point: this beautiful Thai Salad with Peanut Sauce – it seriously tastes as good as it looks! Simply made with a bag of coleslaw mix & a few other ingredients! 

I love using cole slaw mix because it’s already washed & chopped, and so versatile! This salad is delicious on its own, but even better with the addition of chicken or tofu for added protein!

 

 

 

But we need a moment of silence for this Peanut Sauce. It is the bomb.com!

I literally want to put it on everything! The sauce is such a tasty compliment to the veggies, and AMAZING on chicken or tofu!  Or as a dip for spring rolls, or chicken kabobs, the possibilities are endless!

A bag of Cole Slaw mix makes this delicious Thai salad come together in minutes! Top it off with this amazing Peanut Sauce, and you will be making this on repeat! Serve warm or cold – delicious either way!

Ingredients

  • 1 tbsp toasted sesame oil

  • 3 scallions or green onions

  • 1 red bell pepper – seeded & finely sliced

  • 1 12 oz. bag of cole slaw mix

  • 1 tbsp soy sauce

  • 1/4 – 1/2 cup chopped, roasted peanuts or cashews

  • Peanut Sauce
  • 1 tsp. minced ginger

  • 1 clove minced garlic

  • 3 tbsp toasted sesame oil

  • 1 1/2 tbsp honey or agave

  • 2 tbsp soy sauce (or Coconut Aminos)

  • 3 tbsp lime juice

  • 1/4 cup orange juice

  • 1/4 cup peanut butter (or almond butter)

  • 1/2 tsp salt

  • Optional: 1/2 tsp cayenne pepper (or Sriracha sauce)

Directions

  • Blend all Peanut sauce ingredients together in a blender until smooth. Set aside.
  • Add 1 tbsp sesame oil to a large skillet over Medium heat. Add scallions & bell pepper, stirring frequently, about 3 minutes. (If you are adding any protein (cooked chicken or tofu), you should add that at this time.)
  • Add Cole slaw mix & 1 tbsp of soy sauce. Stir while cooking until slaw is starting to wilt, about 5 minutes.
  • In the last minute of cooking, drizzle about 3 tbsp of peanut sauce over mixture, stirring to combine.
  • Top with chopped peanuts and serve immediately, with extra sauce on top if desired!

Notes

  • You can certainly make this a cold salad, by just combining the veggies and top with Peanut sauce.
  • Cold Pad Thai or Soba noodles are a great addition to this salad as well!
