I dig beets! I think you either love or hate them. I’m definitely a lover! Especially roasted beets, which gives them a sweet, almost fruity flavor.

If you don’t believe me, you need to try this super simple Sweet & Savory Beet Galette, that only requires 5-ingredients and makes a perfect Fall starter or main with a side salad!

You cannot beat a galette for easy elegance.  In this galette, the rustic French cousin of a pie, simply roll out store bought pie crust, top with tasty fig jam & add dollops of  tangy Boursin cheese, leaving a border all the way around.  Store-bought roasted beets are then sliced, and arranged on top.  Fold up the border of the pie crust around the beets, roast and top with chopped walnuts! And voila! – you have an elegant Fall treat!

This super simple 5-ingredient Sweet & Savory Beet Galette makes a perfect Fall starter or lunch with a side salad!

Ingredients

  • 1/2 of (5.3 oz.) package Boursin semi soft cheese

  • 1 refrigerated pie crust – thawed

  • 1 ( 8.8 oz.) package Love Beets – cooked beets – sliced in 1/4” slices

  • 1/2 cup + 1 tbsp fig jam

  • 1 tbsp chopped walnuts for garnish

Directions

  • Preheat oven to 375 degrees. Roll out thawed refrigerated pie dough.
  • Spread 1/2 cup fig jam over pie crust, leaving a 1-2 inch border around outside of crust.
  • Crumble bits of cheese all over jam, and arrange sliced beets in a circular pattern, covering fig jam.
  • Fold up the uncovered pie crust every 2 inches, over the edge of the beets & repeat all the way around.
  • Bake for 30 minutes on middle rack of oven, or until crust is beginning to brown.
  • Brush last tablespoon of fig jam over crust, garnish with chopped nuts (if desired) and serve warm.

Notes

  • Inspired by @betterhomesandgardens October 2020 issue which included a Beet Galette, however, I added several short-cuts in this version!
