Southwest Black Bean & Chicken Skillet
Chicken, beans, rice & salsa make a delicious skillet dinner in one pan! In only 30 minutes! Yes, please!
Ingredients
- 1 cup uncooked long grain white rice
- 1 cup salsa
- 1.5-2 cups precooked, shredded chicken
- 1 can black beans (15 oz.)
- 1 TBSP chili powder
- 1.75 cups chicken broth
- 1 cup shredded cheese
- 2-3 sliced green onions for garnish
Directions
- Step 1 Combine rice, salsa, chicken, drained beans, chili powder & chicken broth in a large skillet. Stir until combined.
- Step 2 Place a tight fitting lid on skillet over High heat, and let mixture come to full boil. After it reaches a boil, turn the heat down to Low and simmer for 15 minutes.
- Step 3 After 15 minutes, turn off heat, and let it rest with lid on for 5 minutes.
- Step 4 Remove lid, fluff the mixture with a fork – all of the liquid should be absorbed and the rice should be tender.
- Step 5 Sprinkle cheese over top and garnish with green onions. Enjoy!
