Chicken, beans, rice & salsa – I don’t know why that is always such a good combo, but it just is!!  This ONE-PAN Pantry Meal comes together so quickly & easily with ingredients that you probably already have!  If you have pre-cooked chicken or canned chicken, this dinner comes together in about 30 minutes!  Win-win!

Chicken, beans, rice & salsa make a delicious skillet dinner in one pan! In only 30 minutes! Yes, please!

Ingredients
  • 1 cup uncooked long grain white rice
  • 1 cup salsa
  • 1.5-2 cups precooked, shredded chicken
  • 1 can black beans (15 oz.)
  • 1 TBSP chili powder
  • 1.75 cups chicken broth
  • 1 cup shredded cheese
  • 2-3 sliced green onions for garnish
Directions
  • Step 1 Combine rice, salsa, chicken, drained beans, chili powder & chicken broth in a large skillet. Stir until combined.
  • Step 2 Place a tight fitting lid on skillet over High heat, and let mixture come to full boil. After it reaches a boil, turn the heat down to Low and simmer for 15 minutes.
  • Step 3 After 15 minutes, turn off heat, and let it rest with lid on for 5 minutes.
  • Step 4 Remove lid, fluff the mixture with a fork – all of the liquid should be absorbed and the rice should be tender.
  • Step 5 Sprinkle cheese over top and garnish with green onions. Enjoy!
