Transform ordinary green beans into a tasty & colorful vegetarian meal with the addition of @traderjoes Teriyaki Tofu and this amazing Thai Peanut Sauce!
Note to Tofu newbies: If you are not sure about tofu (which is not scary!), this is the perfect tofu product for you to try! TJ’s Teriyaki Tofu is already marinated in teriyaki sauce, which is handy, since tofu is otherwise a rather bland protein, which also makes it super versatile.

Simple Thai Green Beans & Tofu with Peanut Sauce

Ingredients
1 (16 oz.) bag green beans (steam-in-bag)
1 package (8 oz.) Teriyaki Tofu (we use Trader Joe’s)
1 red bell pepper – sliced in thin strips
1 tsp olive oil
1/4 tsp onion powder
1/4 tsp kosher salt
1/4 c shredded carrots
Thai Peanut Sauce (recipe below)
Optional: garnish with chopped nuts
- Peanut Sauce
1 tsp. minced ginger
1 clove minced garlic
3 tbsp toasted sesame oil
1 1/2 tbsp honey or agave
2 tbsp soy sauce
1 ½ tbsp lime juice
1/4 cup orange juice
1/4 cup peanut butter
1/2 tsp salt
Optional: 1/2 tsp Sriracha sauce
Directions
- Add Peanut Sauce ingredients to a blender, and pulse until combined. Set aside.
- Steam green beans in microwave per package directions. Meanwhile, slice bell pepper into strips.
- Heat olive oil in large skillet and add steamed green beans & sliced peppers. Sprinkle with onion powder & salt, and heat through 2-3 minutes. Next, add cubed tofu & 1-2 tablespoons of Peanut Sauce, and sauté for another 2-3 minutes.
- Plate each serving of green bean mixture with a sprinkle of shredded carrots, & a tablespoon of Peanut Sauce. Add garnish of chopped nuts if desired.
Notes
- Make Peanut Sauce ahead of time to speed this meal up even more! Will last in refrigerator for 5 days!
- Steamed rice is a great addition to this meal!
