Who likes it spicy?? This zesty shrimp recipe served over fresh corn, zucchini & onions, and served with creamy avocado fits that bill!  Just a tablespoon of chipotle pepper in adobo adds just enough heat to the sauce, while the avocado balances it out perfectly.

So many fresh summer flavors in this dish! But don’t forget the avocado! The creaminess of the avocado is essential in balancing out the spice of the chipotle pepper!

Who likes it spicy?? This zesty shrimp recipe served over fresh corn, zucchini & onions, served with creamy avocado fits that bill!

Ingredients
  • Sauce:
  • 1 tsp olive oil
  • 1 small yellow onion - diced
  • 2 garlic cloves - minced
  • 1 -14.5 oz. can diced tomatoes
  • 1/4 cup fresh chopped cilantro
  • 1 tbsp chopped chipotle in adobo (or less for less spice)
  • 1 tsp brown sugar
  • 1 tsp kosher salt -divided
  • 1 tbsp unsalted butter
  • 3 ears of corn - kernels removed
  • 2 medium zucchini - cut into 1/2 moons
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • Black pepper, to taste
  • Juice from 1/2 a fresh lime
  • 1 lb large shrimp - peeled & deveined
  • 8 oz. avocado - from 2 Hass avocados - sliced
Directions
  • Step 1 Heat a medium skillet over Medium-High heat. Add olive oil and sauté the yellow onion for 3-4 minutes or until translucent. Add the garlic & sauté 1 minute more.
  • Step 2 Transfer onion mixture to a blender with the can of tomatoes, cilantro, chipotle in adobo, brown sugar & 1/2 tsp salt. Blend to desired texture.
  • Step 3 In the skillet, add the butter & allow to melt. Add the corn, zucchini, garlic powder, oregano, 1/2 tsp salt & pepper. Sauté until softened, stirring occasionally, about 8 minutes. Transfer to a serving platter & squeeze lime juice over top. Cover with foil to keep warm.
  • Step 4 Transfer sauce from blender to skillet and add the shrimp. Coat the shrimp with the sauce and cook in the sauce until cooked through, approx. 5 minutes.
  • Step 5 Spoon shrimp & sauce over top veggies and garnish with sliced avocado.
