Who loves a delicious 5-Ingredient, One-pan meal?! Me! I’ve heard a few of you are big fans of them too! So here you go – this super simple recipe from @unsophisticook should please everyone, including the kiddos!

Meatball Casserole is the easiest way to answer that Italian food craving without breaking a sweat!  Simply bake store-bought meatballs in a casserole dish with pasta sauce, spinach, and top with ricotta & shredded mozzarella cheese, and dinner is served! We served it with steamed broccoli, but it’s even tastier over some pasta! Check it out!

Ingredients

  • 1 or 2 dozen pre-made fresh meatballs (such as Carando Abruzzese)

  • 1 24 oz. jar marinara sauce

  • 2 cups packed fresh baby spinach

  • 1 cup ricotta cheese

  • 1 1/2 cups shredded mozzarella cheese

  • Optional: chopped fresh basil for garnish

Directions

  • Preheat oven to 375 degrees. Place meatballs on an aluminum foil lined sheet pan, and bake for 20 minutes, turning after 10 minutes.
  • In the bottom of a 9 x 13” baking dish or large round oven-safe pan, mix together marinara sauce & baby spinach. Arrange cooked meatballs In the dish, nestling them down in the sauce.
    Dot the top of each meatball with a teaspoon of ricotta cheese. Sprinkle all of the mozzarella cheese over top of meatballs.
  • Bake at 375 degrees for 20 minutes, until casserole is bubbly. If desired, place meatballs under the broiler for an additional 2-3 minutes, until cheese is starting to brown. Serve over pasta or with a side salad.

Notes

  • You may want to use 2 dozen meatballs if they are on the smaller size!
