Gnocchi with Spinach, Sausage & Artichokes

Let’s talk Turkey! 🦃 It’s not just for Thanksgiving anymore!  

I thought I would kick off Turkey season sharing some non-traditional ways to cook turkey that may be new to you!  

This recipe uses Turkey Sausage or more specifically, @hillshirefarm Turkey Kielbasa.  Yep, the folks @hillshirefarm can make turkey smoky & delicious too! 

Gnocchi with Spinach, Turkey Sausage & Artichokes is SO ridiculously easy, only requires FIVE ingredients, and is done in 20 minutes! 

 

I also love that I can buy these ingredients and keep them on hand for a night when I need a quick meal.  We love to pickup @greengiant frozen veggies that are ready when we are.  And we LOVE this Cauliflower Gnocchi!  PSA: ignore the cooking instructions that say to add water to the pan.  Just throw those frozen babies into a oiled hot pan, and they brown and cook through in no time!  

And don’t forget to buy @hillshirefarm sausages when you see them on special! We always stock up and freeze them until we need them.  They freeze perfectly!  Finally, one of my Pantry staples is always artichoke hearts – they are so versatile.  And Parmesan – um, duh – cheese is my thing.  ALWAYS in the fridge! 

 

Tangy artichoke hearts add so much flavor to sautéed cauliflower gnocchi, and the @hillshirefarm Turkey Kielbasa is already cooked, and only needs to be chopped & heated through.  Add chopped spinach & a sprinkling of Parmesan, and you have a delicious meal! 

 

Cauliflower Gnocchi with Spinach, Artichokes & Turkey Sausage

Ingredients

  • 1 (10 oz.) package frozen chopped spinach

  • 1 tbsp olive oil

  • 1 (12 oz.) bag of frozen cauliflower gnocchi

  • 2 links cooked Italian turkey sausage

  • 1 (12 oz.) jar quartered artichoke hearts, drained

  • 1/4 cup grated parmesan cheese

Directions

  • Place frozen spinach in a microwave-safe dish and microwave on High until thawed, about 5 minutes. While spinach cooks, chop turkey sausage into bite size pieces and drain artichoke hearts. Set aside.
  • When spinach is cool enough to handle, place spinach in cheese cloth and squeeze most of the water out of spinach. Don’t skip this step! There is so much water in that frozen spinach – does not make for good eats!
  • Meanwhile, heat 1 tablespoon of olive oil in a large skillet. Add frozen gnocchi and cook, stirring frequently until browned, about 5 minutes.
  • Stir sausage, artichoke hearts & spinach into gnocchi. Cook, stirring to break up spinach until all is heated through – about 3 minutes. Sprinkle with grated Parmesan and serve.

Notes

  • Technique note: To squeeze water out of cooked spinach, I find using Cheese Cloth the most effective. However, you could also use a double thickness of paper towels, or a tea towel also.
