Confession: I bought the Trader Joe’s Chicken Andouille Sausage not knowing what I was going to make with it, but knowing it sounded good!  Do you do that?

I’m bad about that.  But it encourages me think creatively, and try something new, and that’s always fun! Enter this easy recipe for Jambalaya from @dinnerthendessert – I’m pretty much a sucker for any Pinterest recipe that begins with the word “Easy”!  And this actually is!

If you are looking for a healthy One-Pot dish with the spice turned up, then this recipe for Easy Jambalaya with Chicken, Shrimp & Andouille Sausage is for you!

Ingredients

  • 2 tbsp olive oil

  • 1 package Trader Joe’s Chicken Andouille Sausage links -sliced

  • 1 yellow onion – chopped

  • 1 red bell pepper – chopped

  • 2 stalks celery – chopped

  • 2 chicken breasts – skinless, boneless – cut into bite size chunks

  • 1 (28 oz.) can diced tomatoes

  • 2 cups chicken broth

  • 1/2 tsp dried thyme

  • 2 tsp dried oregano

  • 1 tbsp Cajun seasoning (recipe to make your own below)

  • 1/2 tsp cayenne pepper

  • 1 lb. large shrimp – peeled, tails removed

  • Optional: steamed rice for serving (we use Trader Joe’s Frozen Brown Rice) and/or chopped Parsley

Directions

  • Prep: chop onion, bell pepper & celery first. Then slice sausage into 1/2 inch slices, finally chop chicken into similar sized pieces.
  • Heat 2 tbsp olive oil over Medium-Low heat in a large skillet. Add sausage and cook until browned on both sides – approximately 5 minutes. Remove from pan.
  • Add onion, bell pepper & celery to skillet. Cook 5-7 minutes, stirring every few minutes.
  • Reduce heat and add chicken, tomatoes, chicken broth, thyme, oregano, Cajun seasoning & cayenne. Stir well to combine, cover Dutch oven or skillet and cook 15-18 minutes, until chicken is cooked.
  • Add shrimp & sausage to mixture, stir and cook another 5 minutes, uncovered. Serve over steamed rice if desired.

Notes

  • Note: You can make your own Cajun Seasoning as follows: 1 tsp garlic Powder, 1/2 tsp ground pepper, 1/2 tsp kosher salt, 1 tsp onion powder, 1/2 tsp cayenne pepper, 1/2 tsp dried oregano, 1/2 tsp dried thyme, 1/4 tsp red pepper flakes, & 1/2 tbsp smoked paprika
  • Serving suggestion: Serve over steamed rice – a package of Trader Joe’s Frozen Brown Rice contains 3 bags & is ready in 3 minutes!
