You will never believe that this delicious chocolatey treat includes 1 and 1/2 cups of shredded zucchini! IMO if you can get a serving of vegetables in your dessert, then that is a WIN!

This treat is mixed all in ONE bowl, and solves the problem of what to do with ALL.THE.ZUCCHINI!!

You will never believe that this delicious chocolatey treat includes 1 and 1/2 cups of shredded zucchini! IMO if you can get a serving of vegetables in your dessert, then that is a WIN!!

Ingredients
  • 1/2 cup coconut oil or room temperature unsalted butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 TSP vanilla extract
  • 1 TSP baking powder
  • 1/2 TSP baking soda
  • 3/4 TSP salt
  • 1 3/4 cup Whole Wheat flour or All-Purpose Flour
  • 1 1/2 cup grated zucchini
  • 1/3 cup cocoa powder
  • 1/8 cup hot coffee
  • 3/4 cup chocolate chips
  • 1/2 cup walnuts - chopped (optional)
Directions
  • Step 1 Preheat oven to 350 degrees. Grease a 9×5 loaf pan or line with parchment paper.
  • Step 2 Use hand mixer to cream oil or butter in a medium bowl with both sugars until light and fluffy
  • Step 3 Add eggs one at a time, beating well between each addition.
  • Step 4 Add vanilla, baking powder, baking soda, and salt. Stir until well combined.
  • Step 5 Stir in flour, zucchini, cocoa powder, coffee, 1/2 cup chocolate chips, & nuts until well combined.
  • Step 6 Pour into prepared loaf pan & sprinkle top with remaining 1/4 cup of chocolate chips. ALLOW LOAF TO REST FOR 20 MINUTES.
  • Step 7 Bake for 60 minutes, or until toothpick inserted into the center comes out clean.
