Beet Salad with Asparagus & Goat Cheese

This salad is so simple, but makes such a great meal without even adding protein! 

Now I know beets are one of those foods that you either love or hate.  If you are a hater, hear me out.  I know they are messy to prepare and some think they have a weird consistency.  However, they now sell beets that have already been roasted and peeled in a convenient little package!  The brand is called Love Beets (see pic below).  And they are awesome!  You can find it in the produce area, and it really takes all the messiness out of preparing beets. 

Also I find that roasting beets makes them really tasty.  The natural sweetness really comes out in the roasting process, like with other root veggies. In this recipe, the tanginess & creaminess of the goat cheese goes so well with the beets.  Add asparagus and you have a delicious salad!

My husband actually dreamed up this recipe for me one night, when I didn’t have time to cook – he’s the best!  We used spinach for our greens, but you could really use whatever you have on hand.  Toasted pine nuts would also be a great add to this salad!  I keep a bag in my freezer at all times, for recipes just like this!

Finally, I love the colors of this salad – it looks so pretty on the plate! I know that sounds silly, but I bet your family/guests will agree!

 

Beet Salad with Asparagus & Goat Cheese

Beets, goat cheese and asparagus spruce up a ho-hum salad to make a complete meal!

Ingredients
  • 1 8.8 oz. package Love Beets
  • 10 asparagus stalks
  • 1 TBSP olive oil
  • 1/2 package goat cheese
  • 5 oz. Baby Spinach (1/2 of 10 oz. package)
  • Olive oil and Balsamic vinegar for dressing
Directions
  • Step 1 Wash and chop asparagus into 1/3s – heat olive oil in medium saute pan, and add asparagus. Stir while cooking for 5 mins.
  • Step 2 Meanwhile, remove and drain beets from package – cut into bite size pieces.
  • Step 3 Distribute spinach into 4 plates, top with beet pieces, asparagus and crumble goat cheese on top of each.
  • Step 4 Salt & pepper salad to taste and drizzle with olive oil and balsamic vineagar. Enjoy!
