Here’s a great recipe for Turkey that is NOT the Thanksgiving Turkey!

Turkey Taco Chili Mac is a cozy, stick-to-your-ribs kind of meal that the whole family will love!  And it is the tastiest thing I have ever made with ground turkey! Seriously!  It satisfies that Mac-n-Cheese craving, with hardly any cheese!  Refried beans add the creaminess,  and all you need is a little bit of shredded cheese for the top!

Ingredients

  • Taco Seasoning
  • 1 1/2 tsp garlic powder

  • 1 1/2 tsp ground cumin

  • 1 1/2 tsp chili powder

  • 1 1/2 tsp paprika

  • 1/2 tsp dried oregano

  • 1 tsp kosher salt

  • Chili
  • 1 tbsp olive oil

  • 1 1/4 lb. ground turkey

  • 1 medium onion – chopped

  • 3 garlic cloves – minced

  • 1 red bell pepper – chopped

  • 1 (10 oz.) can diced tomatoes with green chiles (like Rotel)

  • 1 (14.5 oz.) can kidney beans – rinsed & drained

  • 1 (8 oz.) can tomato sauce

  • 1 (15 oz.) can refried beans

  • 8 oz. (approx. 2 cups) dry pasta shells (gluten-free if desired)

  • 2 cups chicken broth (I make mine from Better Than Bouillon)

  • 3/4 cup shredded sharp cheddar cheese

Directions

  • In a small bowl, mix together all the spices & salt listed in Taco Seasoning section above. Set aside.
  • Heat 1 tablespoon olive oil in a large pot or Dutch oven over Medium-High heat. Add turkey and brown the meat, using a wooden spoon to break it up as it cooks, approximately 4 minutes.
  • Add onion, garlic, bell pepper & taco seasoning. Cook, stirring to combine about 2-3 minutes. Add diced tomatoes, kidney beans, tomato sauce, refried beans, chicken broth & 1 1/2 cups water to the mixture. Stir to combine. Bring to a boil, then reduce the heat to Medium-Low, cover and simmer for 15 minutes to blend the flavors.
  • Stir in the pasta and simmer uncovered, over Medium Heat for approximately 8 minutes, or according to the package directions.
  • Taste test a pasta shell to insure it is cooked to desired texture before serving, with shredded cheese over the top.

Notes

  • Garnish with chopped green onions & cilantro if desired!
