Have you ever had Buffalo Chicken with sweet potatoes? It’s surprisingly a great combo – the sweetness of the potato makes for the perfect contrast to the spicy chicken! I mean, who doesn’t love a stuffed baked potato? Especially, when it ALL cooks in the slow cooker (potatoes too)! With only FIVE ingredients! 🙌
Simply remove the potatoes after 6 hours, shred the chicken and top with your favorite Ranch dressing & chopped green onions. Done! This is probably the easiest fix-it-and-forget-it Slow Cooker recipe ever! And any leftover chicken makes a great salad or wrap the next day!
If you are already a Frank’s RedHot sauce fan, this will be yet another delicious option for that amazing condiment. I mean a) it’s organic and Whole30 compliant, but b) and more importantly, it makes the BEST buffalo chicken every.single.time! Love me some @franksredhot !

Buffalo Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes
1 lb. boneless, skinless chicken breasts
1 tsp garlic powder
1/2 cup Frank’s RedHot sauce
1/2 cup Ranch-style dressing
Optional: 1 tbsp. chopped green onions
Directions
- Wash & dry sweet potatoes. Wrap each in aluminum foil & place potatoes in one end of the slow cooker, two stacked on each other.
- Place chicken breasts in the other end of slow cooker; sprinkle with garlic powder, and pour 1/4 cup of the hot sauce over top of chicken.
- Cover slow cooker and cook on low 6 hours, or until chicken is cooked & potatoes are tender when pierced with a fork. Remove potatoes carefully from the slow cooker.
- Add last 1/4 cup of hot sauce to slow cooker, and shred chicken with 2 forks. Stir well.
- When cool enough to handle, slice potatoes open long ways, and divide chicken between 4 potatoes. Drizzle each with 1 tablespoon of Ranch dressing, and top with chopped green onions if desired.
