This Teriyaki Tofu Stir-fry is the perfect Meatless Monday meal & so darn easy to make!  This Trader Joe’s tofu product is already marinated in teriyaki and doesn’t require pressing & draining that plain tofu requires. (I mean, who has time for that?!)

 

Here I added chopped baby Bella mushrooms & broccoli florets to the stir fry, and added a couple more tablespoons of teriyaki before serving over rice.  You could skip the rice, or sub cauliflower rice to make this paleo. It’s so versatile, & the hubby (and I) loved it!

This Teriyaki Tofu Stir-fry is the perfect meatless meal & so darn easy to make!  This Trader Joe’s Teriyaki tofu is already marinated and makes a complete meal when added to sliced mushrooms & broccoli! Yummy served over TJ’s Frozen Brown Rice!

Ingredients

  • 2 (7 oz.) packages Trader Joe’s Teriyaki Tofu – sliced into bite size cubes

  • 1 (10 oz.) bag of Trader Joe’s Organic Brown Rice

  • 1 bag broccoli florets

  • 8 oz. fresh Baby Bella Mushrooms – sliced (or Shiitake)

  • Optional: 2-3 green onions – sliced for garnish

  • 1 tbsp Sesame Oil or olive oil

  • 2 tbsp bottled teriyaki sauce (such as Kikkoman)

Directions

  • Heat 1 tbsp of Sesame Oil in a large skillet or wok over Medium-Low Heat. Add mushrooms – toss once in oil, then brown mushrooms without stirring and only flipping once halfway thru 3 minutes.
  • Move mushrooms to outer part of skillet & add tofu to center of pan. Again, cook tofu, turning once halfway through 3 minutes. Meanwhile, steam bag of broccoli florets in microwave for 2 minutes on High.
  • After steaming broccoli, add to skillet with tofu along with 2 tbsp bottled teriyaki sauce. Meanwhile, cook 1 bag of TJ’s Brown Rice in microwave for 3 minutes.
  • Serve tofu mixture over rice, garnish with sliced green onions if desired.
