Wondering what’s for lunch? This easy Greek salad inspired pasta dish is the perfect solution! Also great for summer parties, served as a side dish or for right now!

I love the combination of briney Kalamata olives & feta cheese with the sweet cherry tomatoes and peppers – tastes like summer! ☀️

Greek Pasta Salad

A light pasta salad loaded with summer veggies, Kalamata olives & feta in a homemade Greek dressing - perfect for summer lunches!

Ingredients
  • Dressing:
  • 3 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1/3 cup olive oil
  • 1/2 tsp garlic powder
  • 1 tsp oregano
  • 1/2 tsp kosher salt
  • 16 oz. pasta (rotini, cavatappi or bow ties) wheat or gluten-free
  • 1/2 cup halved pitted Kalamata olives - plus 2 tbsp of brine
  • 1/3 cup red onion - diced
  • 3 cups diced English cucumber (1 large cucumber)
  • 1 pint cherry tomatoes - halved
  • 1 orange bell pepper - diced
  • 1/2 cup feta cheese - cubed or crumbles
Directions
  • Step 1 Bring a large pot of salted water to boil and cook pasta according to package directions. Drain & rinse under cold water and drain again.
  • Step 2 Meanwhile, whisk together the dressing ingredients in a large bowl.
  • Step 3 Add the olives, red onion & brine from the olives – mix to combine.
  • Step 4 Finally, add pasta, cucumber, tomatoes & bell pepper and toss well. Top with feta cheese just before serving.
