Ever have a craving for sushi, but don’t want to go out? Here’s your answer!

Spicy Crab Stuffed Avocado is inspired by your favorite California Roll, but without the rice!  These spicy Crab Stuffed Avocados are filled with crab, diced cucumbers and spicy mayo topped with a drizzle of soy sauce. And perfect for lunch!

This recipe is inspired by the brilliant Gina Homolka, creator/author of Skinny Taste blog and cookbooks.  I absolutely love her recipes they are healthy but not TOO restrictive, if you know what I mean. Check her out!

Spicy Crab Stuffed Avocado is inspired by your favorite California Roll, but without the rice! These spicy Crab Stuffed Avocados are filled with crab, diced cucumbers and spicy mayo topped with a drizzle of soy sauce. And perfect for lunch!

Ingredients
  • 2 tbsp mayonnaise
  • 1 1/2 tsp Sriracha - plus more for drizzling
  • 4 oz. lump crab meat
  • 1/4 cup peeled & diced cucumber
  • 1 Hass Avocado
  • 2 tsp soy sauce
Directions
  • Step 1 In a medium bowl, combine mayonnaise & sriracha. Add crab meat & cucumber and gently blend together.
  • Step 2 Cut avocado in half, remove pit, and peel skin off or spoon avocado half out onto plate.
  • Step 3 Split crab mixture evenly between avocado halves. Drizzle with soy sauce before serving.
