Grilled Cheese and Tomato Soup. The comfort food of my youth – you too?
But instead of the soup from the red & white can, let’s make homemade! It’s seriously sooo easy, and you can feel good about serving a soup to your family that doesn’t have a million weird named ingredients in it!
The obvious side to this soup is the beloved Grilled Cheese, and I think everyone has their own favorite cheese for this staple. But I will make one suggestion: mayonnaise. Yes, mayo! Spread it on the outside of your bread before you put in the skillet, and you will get the ultimate golden brown crust! Seriously! Try it out!
Easy Tomato Basil Bisque
Homemade tomato soup amped up with the addition of basil, cream and butter!
Ingredients
- 4 cups canned diced tomatoes (or 8 fresh, peeled & chopped tomatoes)
- 2 cups tomato juice (I used V8)
- 2 cups chicken or vegetable stock
- 8 basil leaves - chopped
- 1 cup heavy cream
- 1 stick unsalted butter
- 1 bay leaf
- 1/2 tsp baking soda
Directions
- Step 1 Combine tomatoes, tomato juice, broth, bay leaf & baking soda in a large stock pot or Dutch oven – simmer for 30 minutes – stirring occasionally
- Step 2 Remove from heat – let cool 5-10 minutes, then purée in blender with basil. You may need to blend in batches. Use caution with blending hot liquid.
- Step 3 Return to saucepan over Low heat. Add cream & diced butter while stirring.
- Step 4 When fully blended, serve & enjoy!
