Tuscan Chicken and Sautéed White Beans

This meal sounds fancy, but it’s really simple.  If you are smart and have stashed chicken in the freezer, you could whip up this rustic, but elegant Italian dish in no time!

The chicken is sautéed with mushrooms, spinach & diced tomatoes, while the Cannelini (or Great Northern) beans are simply heated through with garlic, red peppers and & Italian seasoning – all things you probably already have in your pantry! The beans are a nice alternative to the traditional Italian pasta side.

I actually found this recipe at my local Publix a few years ago, in their Publix Aprons Simple Meals idea cards.  Don’t forget to check those out – lots of good inspo!

So open that bottle of Chardonnay, defrost your chicken, grab the beans and tomatoes from your pantry, and pick up spinach & mushrooms in the produce section.  Win/win – healthy and includes vino! My kind of meal! 😉

Ingredients
  • FOR CHICKEN
  • 1 LB chicken cutlets (or breast pounded thin)
  • 2 TBSP olive oil
  • 1/2 TSP kosher salt
  • 1/4 TSP ground pepper
  • 1/4 cup white wine
  • 1 cup fresh sliced mushrooms
  • 5 oz. fresh baby spinach leaves (2 big handfuls)
  • 1 (14.5 oz.) can Italian style diced tomatoes (drained) or plain diced tomatoes + 1/2 TSP Italian seasoning
  • 4 oz. mozzarella cheese (fresh sliced or shredded)
  • FOR BEANS
  • 2 (15.9 oz) cans Cannellini beans-drained & rinsed (or Great Northern beans)
  • 1/2 cup chopped roasted red peppers
  • 2 TBSP olive oil
  • 2.5 TSP minced garlic
  • 1/4 cup white wine
  • 1/2 TSP dried Italian seasoning
  • 1/2 TSP kosher salt
  • 1/2 TSP ground pepper
  • 3 fresh Basil leaves-sliced thinly (optional)
Directions
  • Step 1 First, Prepare Beans – Preheat large skillet over medium heat 2-3 minutes.
  • Step 2 Place 2 TBSP olive oil to pan, then add garlic, red peppers, beans, white wine, Italian seasoning & salt/pepper. Cook & stir occasionally 8-10 minutes. Sprinkle with sliced basil
  • Step 3 Next, Cook Chicken -While beans are cooking, preheat another large skillet over medium heat for 2-3 minutes.
  • Step 4 Pat chicken dry, and season both sides of chicken with salt & pepper.
  • Step 5 Add 2 TBSP olive oil to pan, and add chicken. Cook 3-4 minutes on one side, until golden.
  • Step 6 Turn chicken, add white wine, mushrooms, spinach and diced tomatoes to pan.
  • Step 7 Cover and cook 4-5 minutes until chicken is done (reaches 165 degrees).
  • Step 8 Remove from heat – Add mozzarella to top of each chicken cutlet, and let melt.  Serve immediately with beans! Enjoy!
