These Roulades use familiar ingredients to turn weeknight dinner into an elegant meal requiring only a short prep!
Simply wrap turkey (or chicken cutlets) around a filling of deli ham, provolone cheese, and asparagus, wrap with a piece of prosciutto and brown in a skillet on all sides.
It’s like a little meal in one perfect bundle! Serve two per person as an entree, but these would also make a lovely appetizer individually. AND it is oh so pretty on the plate too! – check it out!
Turkey Club Roulades

Ingredients
3/4 lb. fresh asparagus – trimmed
8 turkey (or chicken) cutlets (approx. 1 lb.)
8 slices deli ham
8 slices provolone cheese
1/2 tsp. dry Italian seasoning
1/2 tsp. pepper
8 slices prosciutto
- Dijonnaise Sauce
1/2 cup mayonnaise
1 tbsp. Dijon mustard
Optional: splash of Worcestershire sauce
Directions
- Bring 4 cups water to boil in a large saucepan. Add asparagus, cook uncovered for 3 minutes. Drain & immediately place asparagus in ice water. Drain, pat dry, and set aside.
- Mix sauce ingredients together in a small bowl, and assemble remaining ingredients around a cutting board or work area.
- Spread each cutlet with a teaspoon of the Dijonnaise sauce. Then layer on ham, cheese and 3 asparagus spears on each cutlet. Sprinkle each with Italian seasoning & pepper. Roll up tightly around asparagus. Finally, wrap 1 slice of prosciutto tightly around each bundle.
- Heat a large skillet over Medium-High heat, and add 3-4 roulades to the pan, and brown on each side, turning every 3-4 minutes, until turkey is no longer pink, and prosciutto is cooked, approximately 12-15 minutes. Note: Don’t overcrowd the pan with too many roulades at one time.
- Remove cooked roulades and repeat process with remaining roulades, keeping the first batch warm in a 200 degree oven or warming drawer.
Serve immediately.
Notes
- Note: Bacon can be used in place prosciutto. I prefer prosciutto, as I think it cooks quicker.
