Again, Trader Joe’s makes dinner SO easy! And it’s on the table in 20 minutes – seriously!
This Sheet Pan meal uses TJ’s Sweet Potato Gnocchi, Italian Chicken Sausage and their Kale, Cashew & Basil Pesto. I added in broccoli florets to round this out to be a complete meal.
I will tell you I wasn’t sure about using Sweet Potato gnocchi, as we don’t usually like the sweet flavor with a savory meal, but we could not detect any sweetness in this one. Also, TJ’s has several different varieties of Italian Sausage – we used Spicy, but they also have Sweet Italian, and several others, giving you several options for customizing this meal. Finally, the Pesto at TJ’s has a great basil flavor, but without the dairy -yep – it’s dairy free! But it really works as a light sauce for all these components.
Dinner prep could not be simpler – chop the sausage and broccoli into bite-size pieces and add to the gnocchi on a foil lined Sheet Pan. Note – spray your foil with non-stick spray or use Non-Stick aluminum foil, as the gnocchi is prone to stick a little bit. Drizzle olive oil over the whole mixture with salt/pepper and put in the oven for 15 minutes – that’s it! Then drizzle with pesto to your taste and BOOM – you’re done!
Enjoy!
