Who DOESN’T love Mexican food? I mean, really?! What’s not to love?

Of course, the American version of Mexican food is probably more appropriately classified as ‘Tex-Mex cuisine’ – since it’s more like Mexican-inspired American food! But that’s ok with me! I still love it!

This week, I’m featuring TWO vegetarian recipes! I really enjoy going meatless lately, especially in the summer!  And don’t miss the Sheet Pan Shrimp 🍤 Fajita recipe! So quick & easy for Taco Tuesday! 🌮

You will see that the Black Beans, Poblano Peppers & Cauliflower (yes, cauliflower!)  lend themselves so well to Mexican cuisine!
