This traditional Irish staple makes a hearty meal and is a breeze to put into the slow cooker!
Publix and Trader Joe’s offer the Corned Beef in the Meat department, prepackaged and already marinated (or corned). These packages usually contain a ‘spice packet’ which I did not include, as I made my own ‘spice sachet’ in cheesecloth with my own spices, but you could use that instead of making your own! The beef goes in the slow cooker on top of the sliced carrots, onions, celery & potatoes, and then I poured a beer on it. Sliced cabbage was added in the last hour, and then it was done!
I liked it better than a traditional Beef Stew, as the meat stays in one piece, and then you can slice it. It was still tender even after cooking for 8 hours in the slow cooker. Tender, but not falling apart. Love the simplicity and that it’s a Clean recipe too! I think St. Patrick would approve!☘️
Crockpot Corned Beef & Cabbage
This hearty Irish staple is a breeze to cook in the slow cooker!
Ingredients
- 1 corned beef brisket with spice packet (3-3.5 lbs)
- 2 lbs of red/yukon gold potatoes - quartered
- 1 lb carrots - cut in to 3 inch pieces
- 2 celery ribs - cut into 3 inch pieces
- 1 small onion - quartered
- 1 bottle Guinness stout (12 oz) or low sodium beef broth
- 1/2 small head of cabbage - thinly sliced
- Spice Sachet
- 8 whole cloves
- 6 whole peppercorns
- 1 bay leaf
- cheesecloth
- OPTIONAL: Horseradish for garnish
Directions
- Step 1 Place cut potatoes, carrots, celery & onion into a 6 quart slow cooker. Add corned beef (discard included spice packet)
- Step 2 Wrap cloves, peppercorns & bay leaf in a double thickness of cheesecloth, & gather corners of cloth to enclose seasonings – tie securely with kitchen twine.(Optional step: you could alternatively use the included spice packet in beef package.)
- Step 3 Place in slow cooker and pour beer over top of all.
- Step 4 Cook covered on Low, 8-10 hours or until meat & veggies are tender.
- Step 5 ADD cabbage the last hour of cooking. (if too full, remove potatoes and enough veg to allow room for cabbage) DIscard spice bag.
- Step 6 When cooking is complete, remove beef and slice diagonally across the grain into thin slices. Serve beef with veggies and horseradish, if desired!
