Salmon Nicoise Salad

If you didn’t take French, I’ll go ahead and explain that this salad uses green beans as the base, instead of lettuce (thus Nicoise in the name).  I took Latin (why?) so I had to be educated on this point.  But, if it’s French, I’m here for it!

This is another recipe inspired by Jamie Oliver’s show,  Jamie Oliver’s 5-Ingredient Meals So given the fact that it a) sounds fancy and b) only requires 5 ingredients, it’s a win-win!

This salad makes a great light meal, and comes together so fast too!  In my opinion, Salmon adds the deliciousness factor, while the black olive/Greek yogurt dressing on the green beans is a surprisingly yummy combo!  Go ahead and mix up your salad game – buy green beans instead!

French inspired salmon salad, with only FIVE ingredients!

Ingredients
  • 2 skin-on salmon fillets (4-6oz)
  • 1 12 oz. bag of Microwave-in-Bag Green Beans
  • 2 eggs
  • 8 black olives, plus some juice from jar
  • 2 TBSP greek yogurt
Directions
  • Step 1 Preheat oven to 350 degrees – place salmon skin side on sheet pan lined with foil – roast for 10 mins.
  • Step 2 Meanwhile, bring water to boil and hard boil eggs for 11 mins and peel – set aside.
  • Step 3 Chop olives finely – mix HALF of the olives with the yogurt along with a splash of olive juice, and salt & pepper to taste.
  • Step 4 During last 3 mins of salmon & egg cooking time, microwave green beans per package instructions.
  • Step 5 Toss beans with dressing in a bowl and spoon into 2 bowls.
  • Step 6 Top with peeled eggs that have been quartered, salmon(skin removed & cut into bite size pieces), and remaining chopped olives. Enjoy!
