Roasted Sausage with Apple & Squash

Chop, roast and toss.  That’s really all there is to this recipe.  Our Sheet Pan friend comes in handy, as we just chop the ingredients, roast in the oven, and dress with a simple mustard vinaigrette.  So.darn.easy.

The squash in this recipe was totally new to me, the Delicata Squash.  You may not have noticed it at the grocery before either, but it is there.  It’s slightly sweet and has thin, edible skin. And it is great roasted with the sausages, apple and onion.  Meet Mr. Delicata below.

Roasted Sausages with Apple & Squash

Apple and red onion add great flavor to the roasted delicata squash and Italian sausage in this recipe. Toss with mustard vinaigrette for a tangy finish!

Ingredients
  • 1 delicata squash (1 lb. approx.)
  • 4 Italian sausages*
  • 1 red onion - cut into 1/2 inch wedges
  • 1 apple - quartered and cut into 1/2 inch slices
  • 1/8 C white wine vinegar (or lemon juice)
  • 1/4 C olive oil
  • 1 TBSP Dijon mustard
  • 1 garlic clove - minced
  • 1/4 TSP salt
  • 1/8 TSP pepper
Directions
  • Step 1 Preheat oven to 425 degrees. Line a sheet pan with parchment paper or non-stick aluminum foil.
  • Step 2 While oven preheats, trim the ends off of delicata squash, cut in half lengthwise and scoop out the seeds with a spoon. Then cut each half crosswise into 1/2 inch thick half-moons.
  • Step 3 On one end of sheet pan, toss squash and red onion with 1 TBSP of olive oil and salt and pepper – spread in a single layer.
  • Step 4 Prick sausages in a few places with a fork and add to the other end of sheet pan (or a separate sheet pan if needed)
  • Step 5 Roast veggies and sausages for 10-12 minutes until starting to brown.
  • Step 6 Remove pan from oven and add chopped apple to vegetables and toss together. Turn sausages.
  • Step 7 Return pans to the oven for another 10-15 minutes longer. Meanwhile, in a separate small bowl, whisk last 6 ingredients together and set aside.
  • Step 8 Remove from oven and allow sausages to rest for 5 minutes before slicing into 1 inch thick slices.
  • Step 9 In a serving bowl, mix sausage slices with vegetables and add the vinaigrette to the mixture to combine.
  • Step 10 Serve and enjoy!

*Note: I have also used a Smoked Sausage instead of Italian Sausages – either works beautifully!
