I’m fan-girling lately with all Greek inspired flavors! I love all the veggies with lemon, balsamic vinegar & Feta cheese, that includes tomatoes, peppers and all the olives!
That’s why I’m loving these bright & tasty Greek Orzo Stuffed Red Peppers with Lemony Basil Tomatoes! They are quick, simple, light & SO DARN GOOD! Serve as a side dish or they make a perfect light dinner with a side salad. Simply roast a few red bell peppers, stuff with a mixture of orzo pasta, balsamic vinegar, olives, feta, pepperoncinis & pine nuts. Top with Lemony Basil Tomatoes – and devour!

Greek Orzo Stuffed Red Peppers

Ingredients
2 large red bell peppers – halved
1 tbsp olive oil
3 clove garlic – minced or grated
Kosher salt & pepper
1 cup dry orzo or quinoa
2 tbsp balsamic vinegar
1/2 cup pitted kalamata olives – halved
2 tbsp chopped pepperoncinis
2 tbsp toasted pine nuts
1/2 cup crumbled feta cheese
- Lemony Basil Tomatoes
1/2 cup fresh basil – chopped
1 cup cherry tomatoes – halved
1/4 cup olive oil
Zest from 1 lemon
Pinch of red pepper flakes
Directions
- Preheat oven to 400 degrees. In a baking dish, arrange halved red peppers, drizzle with olive oil, & sprinkle with garlic, salt & pepper.
- Roast peppers for 20-25 minutes, or until peppers are beginning to char.
- Meanwhile, bring a large pot of salted water to boil. Cook orzo according to package directions until al denote. Drain & mix in balsamic vinegar, olives, pepperoncini, pine nuts & feta cheese.
- Make Lemon Basil Tomatoes by combining cherry tomatoes, basil, lemon zest, olive oil, salt & red pepper flakes in a small bowl.
- Stuff warm orzo inside red pepper halves & top with Lemony Basil Tomatoes. Enjoy!
Notes
- Orzo is a tiny rice shaped pasta available at most grocery stores. Feel free to sub quinoa instead.
- You could also grill the red peppers for 4-5 minutes on each side, instead of roasting them.
