Chicken Parmesan Foil Packets are filled with so much flavor, in one tidy little package!

Fresh summer zucchini, pasta sauce & tender chicken get wrapped in throw-away foil packets and topped with melty mozzarella cheese – what is there not to like?

You can make them ahead of time, then simply toss on the grill or in the oven – and dinner is served!

I have to admit, I really love cooking in little foil packets – so much less cleanup, and it’s so satisfying to just toss the foil in the trash after dinner.  Dishes – DONE!

We use Reynolds Wrap Non-Stick foil for all our packets! It’s great!

 

 

 

If desired, you can serve this over some pasta – to make a heartier meal! Enjoy!

Chicken Parmesan Foil packets pack so much flavor in one tidy packet! Fresh summer zucchini, zesty pasta sauce & chicken get wrapped in melty mozzarella cheese

Ingredients
  • 4 chicken breasts - boneless & skinless
  • 1.5 cups pasta sauce
  • 2 zucchini - cut in 1/2 inch slices
  • 1/2 cup parmesan cheese - shredded or grated
  • 1 cup mozzarella cheese - shredded
  • 2 tsp garlic powder
  • 1 tsp salt
  • 2 tsp Italian seasoning - divided
  • 1/4 cup olive oil
  • Optional:
  • Cooked pasta of choice
  • Parsley - freshly chopped for garnish
Directions
  • Step 1 Preheat grill to Medium heat OR preheat oven to 375 degrees – spray four 12 x 18 inch aluminum foil pieces with cooking spray.
  • Step 2 Divide evenly the zucchini, and place in center of 4 pieces of foil. Sprinkle with salt/pepper to taste & 1 tsp of Italian seasoning & 2 tsp of Parmesan cheese.
  • Step 3 Next, spoon 1/3 cup pasta sauce over each serving. Place a chicken breast on top of the sauce.
  • Step 4 Drizzle each chicken breast with olive oil & then sprinkle each with a mixture of the garlic powder, salt & remaining tsp of Italian seasoning.
  • Step 5 To seal packet, bring long edges up to meet in the center, fold over to seal, then fold up the ends to create a closed packet.
  • Step 6 Place on heated grill (chicken side down)for 8 minutes. (OR on a sheet pan & roast for 30 minutes)
  • Step 7 If grilling, flip packet after 8 minutes and continue to grill for another 8-10 minutes or until chicken reaches 165 degrees.
  • Step 8 Next, slice each packet open with a knife. Sprinkle 1/4 mozzarella over each, and heat to melt. (Either put back on warm grill for 2 minutes OR put back in oven for 2-3 minutes)
  • Step 9 Finally, carefully unfold the side of each packet, and slide over pasta (if desired) onto plate. Enjoy!
