Say hello to a super easy Burrito Bowl, starring Taco flavored roasted cauliflower! Yep! Sounds weird, but it’s seriously good – simply surround the Cauli with your favorite Burrito Bowl flavors, black beans, corn, rice, salsa, avocado, hot sauce and whatever taco toppings make your tummy smile!
Ok, I really don’t think I can call this a ‘recipe’; it’s more like a really good mix of yummy items, that make an awesome plant-based (bowl) meal!
I just added a few short-cuts! 😉 I use this taco seasoning, but any will do – a little bit goes a long way!

Cauliflower Burrito Bowls
Say hello to a super easy Burrito Bowl, starring taco roasted cauliflower! Yep! Then surround the cauli with black beans, rice, corn, salsa, avocado and whatever else you love in your Burrito bowls!
Ingredients
- 1 head of cauliflower (or large bag of florets)
- 1 (15 oz.) can of black beans (drained & rinsed)
- 1 (15 oz.) can of corn (drained)
- 1 (8.8 oz) package of instant brown rice
- 1 TBSP taco seasoning
- Salsa & hot sauce
- Avocado
Directions
- Step 1 Preheat oven to 425 degrees. Wash cauliflower & separate into bite size florets. Toss in a bowl with 1/2 TBSP of taco seasoning (or more if desired) & 1 TBSP olive oil.
- Step 2 Pour florets onto a foil lined sheet pan, and roast for 20 minutes.
- Step 3 Meanwhile, add other 1/2 TBSP of taco seasoning to drained black beans and toss. Heat instant rice according to package directions.
- Step 4 When cauliflower is almost done, heat seasoned black beans in microwave safe dish for 1 min 30 seconds.
- Step 5 Finally, build your bowls, by adding cauli, beans, corn, rice, avocado & top with salsa and/or hot sauce if desired!
