Say hello to a super easy Burrito Bowl, starring Taco flavored roasted cauliflower! Yep! Sounds weird, but it’s seriously good – simply surround the Cauli with your favorite Burrito Bowl flavors, black beans, corn, rice, salsa, avocado, hot sauce and whatever taco toppings make your tummy smile!

Ok, I really don’t think I can call this a ‘recipe’; it’s more like a really good mix of yummy items, that make an awesome plant-based (bowl) meal!

I just added a few short-cuts! 😉  I use this taco seasoning, but any will do – a little bit goes a long way!

I saw this meal idea on the @pinchofyum Insta page – and I knew I had to make this, as soon as I saw it! (The sign of a good IG/Blog post, for sure!) You need to check her out, if you don’t follow her already!
