This 5 Ingredient Meal is so simple. You only need tomatoes, mozzarella, basil, chicken, and balsamic glaze (or vinegar) and olive oil! (I’m not counting olive oil in the 5!)
I will urge you here to splurge on an ingredient that really ‘ups’ the tasty factor of this dish. Two words. Balsamic Glaze. This is balsamic vinegar that has already been reduced, which brings out the natural sugars of the vinegar – and it is oh so delish! Fantastic in this dish, or we use it constantly for a salad dressing with olive oil, drizzled over roasted vegetables, and most anything! We buy it at Publix, and the brand we buy is seen below. However, a drizzle of balsamic vinegar with the olive oil is lovely as well.

Caprese Chicken with Balsamic Glaze
The addition of chicken to this Italian classic transforms this salad to a complete meal!
Ingredients
- 2 large boneless chicken breasts
- 2TBSP olive oil, plus more for drizzling
- 2 heirloom tomatoes, sliced 1/4 thick
- 8 oz. fresh buffalo mozzarella, sliced 1/4 thick
- Balsamic glaze (or vinegar), for drizzling
- Fresh basil leaves - julienned- for garnish
Directions
- Step 1 Preheat oven to 300 degrees
- Step 2 Sprinkle chicken breasts with kosher salt and pepper on both sides
- Step 3 Add oil to medium ovenproof skillet, over medium-high heat
- Step 4 Place chicken in skillet and cook 2-3 minutes, until golden
- Step 5 Flip and cook another 2 minutes.
- Step 6 Transfer skillet to oven and roast for another 10-12 minutes, until internal temperature reaches 165 degrees. Let rest 5 minutes.
- Step 7 Slice chicken into 1/4 inch thick slices.
- Step 8 Layer tomatoes, chicken and mozzarella in an row on a long platter.
- Step 9 Drizzle with balsamic glaze(or vinegar) and olive oil, sprinkle with salt & pepper.
- Step 10 Finally, scatter with julienned basil leaves
