I am obsessed with blueberries right now! I ❤️  everything about them – their beautiful blue & purple hues, blueberry smoothies (!) and any dessert starring these little blue beauties!

Blueberry Oatmeal Crumble Bars

The handheld version of a blueberry crumble! Delicious summer blueberries are made even better with the addition of oatmeal crumble as the base & the topping!

Ingredients
  • Filling:
  • 2 cups fresh blueberries
  • 1/4 sugar
  • 2 TSP cornstarch
  • Base & Crumble:
  • 1 cup AP flour
  • 3/4 cup old-fashioned oats (not quick or instant oats)
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 TSP cinnamon
  • 1/4 salt
  • 1/2 cup unsalted butter -melted
  • 1 large egg yolk
  • 1 add’l TBSP brown sugar
Directions
  • Step 1 Preheat oven to 350 degrees. Line an 8×8 baking pan with parchment or non-stick foil and grease with cooking spray.
  • Step 2 In a medium bowl, whisk together flour, oatmeal, sugar, 1/4 cup brown sugar, cinnamon & salt. Gently stir in the melted butter & egg yolk.
  • Step 3 Remove 1 cup of the oatmeal mixture.
  • Step 4 Press the remaining mixture into the bottom of the prepared pan.
  • Step 5 Prepare filling: In a medium bowl, combine all the ingredients for the filling layer. Spoon over top of the base oatmeal mixture in the pan.
  • Step 6 To the reserved 1 cup of oatmeal mixture, add 1 additional TBSP of brown sugar. Mix together, and crumble mixture over the top of the blueberry layer. (I squeeze it in my fist to make big crumbles, before spreading over blueberries!)
  • Step 7 Bake for 40-45 minutes or until the blueberries are bubbling and the top crumble turns golden brown.
  • Step 8 Allow to cool fully to room temperature, (at least 3 hours) before cutting into bars. Bars are easiest to cut when they are cold using a sharp knife.
