Who doesn’t love Apples? In sweet or savory dishes, I can’t get enough of them!
These Apple Oatmeal Crumb Bars give all the yummy Apple Pie vibes, without the mixer or the rolling pin! They are the perfect dessert for Fall dinners or equally delicious with your morning cup of coffee!

Apple Oatmeal Crumb Bars

- Crumb Layer
1 and 1/4 cup all-purpose flour
1 cup old-fashioned oats (not quick or instant)
1 tsp cinnamon
1/4 tsp salt
2/3 cup melted unsalted butter (cooled to room temperature)
3/4 cup brown sugar
1 tsp vanilla
1 large egg yolk
1 tbsp all-purpose flour
1 tbsp brown sugar
- Apple Layer
2 large apples – peeled, cored & cut into 1/4 inch slices
1 tbsp sugar
1 tsp cinnamon
1/4 tsp ground nutmeg
2 tsp cornstarch
2 tbsp lemon juice
Directions
- Preheat oven to 350 degrees. Line an 8×8 or 9×9 square baking pan with aluminum foil or parchment
- Melt butter in microwave for 2.5 minutes at 50% power. Set aside. Peel & slice apples, and toss with lemon juice in a medium sized bowl.
- In a separate large bowl, mix together first 4 ingredients of the crumb layer. In a separate medium bowl, whisk together the cooled melted butter, 3/4 cup brown sugar, vanilla & egg yolk. Add the butter mixture into the flour mixture, stirring everything together using a large wooden spoon or rubber spatula. Reserve 1 cup of the mixture, & press the remaining oatmeal mixture into the bottom of the prepared pan.
- To make the apple mixture, toss together the sliced apples with the cinnamon, sugar & cornstarch until the apples are evenly coated. Arrange the apples into an even layer over top of the oatmeal in the baking pan.
- In the bowl used for the butter mixture, mix the reserved 1 cup of oatmeal mixture with the extra 1 tablespoon of flour & 1 tablespoon of brown sugar. Crumble this mixture over top of the apples.
- Bake in preheated oven for 30 minutes, or until mixture begins to brown on top.
- Allow to cool fully before cutting into bars – approximately 1 hour.
Notes
- Delicious served with a scoop of vanilla ice cream, and caramel sauce!
