A New Spin on a Classic – Blueberry Brie Pastry Bites

Blueberry Brie Pastry Bites are the handheld Summer version of the classic Baked Brie! So easy, and only requires 5 ingredients!  

Thanks to #pepperidgefarm Puff Pastry Shells, you don’t even have to get out a rolling pin!  These little shells come flat in a box, and puff up beautifully when you just bake them straight from the freezer!  They are perfect to serve with sweet or savory fillings, but they are especially delicious with the classic pairing of berries and brie!  

Finally, in order to make these babies extra delicious, I added @bonnemaman_us Wild Blueberry preserves to the shells, and I am oh so glad that I did!  If you have not tried the preserves from Bonne Maman, do it today.  I think they are the best I have ever tasted! 

Blueberry Brie Pastry Bites

Blueberry Brie Pastry Bites are the handheld Summer version of the classic Baked Brie! So easy, and only requires 5 ingredients!  

Ingredients

  • 1 egg – beaten with 1 tsp water

  • 1 (10 oz.) pkg. Pepperidge Farm Puff Pastry Shells

  • 6 mini Brie Bites (such as Supreme Brie Bites) or cubed brie cheese

  • 6 teaspoons Bonne Maman Wild Blueberry Preserves

  • 1 pint fresh blueberries – rinsed & patted dry

Directions

  • Preheat oven to 425 degrees Break apart frozen pastry shells along perforations and brush with egg wash.
  • Bake at 425 degrees for 10 minutes.
  • Remove from oven & use spoon to remove tops of pastry shells (discard), then fill in this order: 1 teaspoon of preserves, top with a Brie bite that’s sliced in half, and then fill with as many blueberries that will fit!
  • Return to the oven for 2-3 minutes, and top with another teaspoon of preserves before serving- enjoy warm or room temperature.
