The Easiest Chili Stuffed Peppers!

This  is probably the easiest Stuffed Pepper recipe I’ve ever seen! Perfect for those nights your are craving Mexican food, but would rather serve homemade than take-out! With only 6 ingredients!

 

A can of @HormelChili without beans adds all the yummy chili spices you need to browned ground chicken (or turkey.  Throw in a little fresh tomato & onion and you have a super easy filling for Poblano (or Bell) Peppers in no time!  Sprinkle with cheese of your choice, for an out of the ordinary Mexican dish for the family!  This stuffing would also be perfect for tacos too!

The easiest Stuffed Pepper recipe I’ve ever seen! Perfect for those nights your are craving Mexican food, but would rather serve homemade than take-out!

Ingredients

  • 1 lb. ground chicken, turkey or beef

  • 1 can (15 oz.) chili without beans

  • 1/4 tsp salt

  • 1 1/2 cups shredded cheese (cheddar or Mexican blend)

  • 1 medium tomato – diced small

  • 4 green onions – chopped

  • 4 large poblano peppers

  • 1 tbsp olive oil

Directions

  • Preheat broiler.
  • Cut peppers lengthwise in half, and remove seeds/stem. Place on a foil lined sheet pan, cut side down, brush with 1 tbsp. olive oil. Broil peppers 4 in. from heat, until skins blister, about 5 minutes. Remove from oven & set aside.
  • Meanwhile, in a large skillet, brown meat, while crumbling, until no longer pink, about 5-7 minutes. Add can of chili & salt to skillet. Mix thoroughly and heat through. Stir in 1/2 cup of cheese, tomato & green onions, mixing until all ingredients are incorporated.
  • Turn peppers cut side up and fill with the chili mixture. Sprinkle with remaining cheese and broil until cheese is melted, 1-2 minutes longer. Serve hot!

Notes

  • We used poblano peppers for this recipe, but you could certainly use bell peppers.
  • Hormel was the brand of Chili Without Beans that we used. Not too spicy, so perfect for the kiddos too!
