This week I decided to lighten things up, and try this Plant-based diet that everybody has been talking about!

Don’t get me wrong, I still love ❤️ a juicy steak, but now that it’s the heat of the summer, I really just yearn for fresh, light fruits & veggies – so here we go!

Here are 3 surprisingly (JK!) tasty meals that are totally plant-based – of course, you are welcome to add in some shrimp or chicken to add to the deliciousness factor (I will not judge!😉) but I think you will find you don’t even miss it!

Asian Chopped Salad with Sesame Soy VinaigretteThis colorful easy-to-prep chopped salad is pretty to look at & so tasty too!  The Sesame Soy vinaigrette is easily made with  items in your pantry, and brings all the Chinese 🥡 takeout flavors without the calories!

Cauliflower Burrito BowlsSay hello to a super easy Burrito Bowl, starring Taco flavored roasted cauliflower! Yep! Sounds weird, but it’s seriously good – simply surround the Cauli with your favorite Burrito Bowl flavors, black beans, corn, rice, salsa, avocado, hot sauce and whatever taco toppings make your tummy smile!

Air Fryer Falafel Make delicious Falafel at home! The Air Fryer & canned chickpeas make this Middle Eastern treat healthy & easy to prepare! Also can be baked in the oven!
