SO tasty, and can be made with a bag of Frozen Cauliflower Rice! 🙌 No grating or food processing required! Add a shredded carrot, some tomato sauce, chicken stock, and spices. Done!
Spanish Cauliflower Rice
Spanish Cauliflower Rice is a healthy & tasty alternative to beans & rice! Frozen riced cauliflower makes this super easy!
Ingredients
- 1 (20 oz.) package of frozen riced cauliflower
- 1 carrot - grated
- 1/2 diced sweet onion
- 2 TBSP unsalted butter
- 1.5 TSP chicken bouillon
- 1 (8 oz.) can tomato sauce
- 1 TSP kosher salt
- 1 TBSP chili powder
- 1 TSP cumin
- Chopped cilantro- to garnish
Directions
- Step 1 Cook the frozen riced cauliflower in the microwave HALF of the time on package directions – approximately 4-5 minutes.
- Step 2 Meanwhile, add butter to a large skillet to melt – add chicken bouillon & mix together briefly, then add carrots & onion. Cook 3 minutes, or until softened.
- Step 3 Add cooked cauliflower rice to skillet, along with salt, chili powder and cumin. Mix together. Lastly, add 3 TBSP tomato sauce (or more, if desired), or until it looks good to you.
- Step 4 Cook 2 minutes longer. Garnish with chopped cilantro & serve hot!
