Is it Taco night?  Here’s a healthy & tasty alternative to beans & rice – Spanish Cauliflower Rice!

SO tasty, and can be made with a bag of Frozen Cauliflower Rice! 🙌 No grating or food processing required! Add a shredded carrot, some tomato sauce, chicken stock, and spices.  Done!

Spanish Cauliflower Rice is a healthy & tasty alternative to beans & rice! Frozen riced cauliflower makes this super easy!

Ingredients
  • 1 (20 oz.) package of frozen riced cauliflower
  • 1 carrot - grated
  • 1/2 diced sweet onion
  • 2 TBSP unsalted butter
  • 1.5 TSP chicken bouillon
  • 1 (8 oz.) can tomato sauce
  • 1 TSP kosher salt
  • 1 TBSP chili powder
  • 1 TSP cumin
  • Chopped cilantro- to garnish
Directions
  • Step 1 Cook the frozen riced cauliflower in the microwave HALF of the time on package directions – approximately 4-5 minutes.
  • Step 2 Meanwhile, add butter to a large skillet to melt – add chicken bouillon & mix together briefly, then add carrots & onion. Cook 3 minutes, or until softened.
  • Step 3 Add cooked cauliflower rice to skillet, along with salt, chili powder and cumin.  Mix together. Lastly, add 3 TBSP tomato sauce (or more, if desired), or until it looks good to you.
  • Step 4 Cook 2 minutes longer. Garnish with chopped cilantro & serve hot!
