Easy Lemon Meringue Pie
Ready-made graham cracker crust makes this pie super quick to put together! Lemon, eggs, cream of tartar, sugar and condensed milk are all you need!
Ingredients
- 1 Keebler Ready Crust Graham Pie Crust, 6 oz.
- Filling:
- 1 (14 oz.) can sweetened condensed milk
- 1/2 cup lemon juice - (approx. 2 lemons)
- 1 TSP lemon zest
- 3 large egg yolks (egg whites reserved for meringue)
- Meringue:
- 1/4 TSP Cream of Tartar
- 3 large egg whites
- 1/4 cup sugar
Directions
- Step 1 Preheat oven to 325 degrees.
- Step 2 To make the filling: In a medium bowl, mix the condensed milk, lemon juice, lemon zest, & scrambled egg yolks together thoroughly. Pour mixture into crust.
- Step 3 To make the meringue: Beat egg whites and 1/4 TSP Cream of Tartar in a medium bowl with electric mixer, until soft peaks form (2-3 minutes).
- Step 4 Then add 1/4 cup sugar and whip until peaks are stiff.
- Step 5 Spread meringue over the pie filling, making sure to seal to edge of crust all the way around.
- Step 6 Bake until meringue browns slightly – approximately 15 minutes.
- Step 7 Remove from oven and cool to room temperature before chilling for at least 2 hours before serving.
