So many reasons to love this meal! First of all, it’s the easiest “surf & turf” dish ever! Secondly, it cooks all in ONE pan! And finally, it’s considered a Paleo dish too!
It’s so tasty, you would never know it’s healthy too!
I also like that this skillet meal is so versatile. The original recipe called for green bell pepper, but I love the red & yellow ones. And, you can use any pre-cooked sausage – we used Hillshire Farm’s Beef Smoked Sausage. We keep it on hand most of the time, because it’s so good on the grill too!
Honestly, you will spend more time chopping the fresh veggies than you will cooking! All chopped & done in 20 minutes! Seriously!
And as for seasoning, it doesn’t get easier than good ol’ Old Bay Seasoning!! That’s all you need for this dish! It’s a pantry staple for us because you just can’t make a Low Country Boil without it! See my recipe for Low Country Boil Foil Packets here! It’s so easy, and the easiest cleanup ever!
If you’re not familiar, Old Bay Seasoning spice mix is a 70-year-old secret mix of herbs and spices that includes celery salt, red pepper, mustard, black pepper, bay leaves, cloves, paprika and some other ingredients they don’t list. I love it, and you will too! Be sure and add this classic to your spice rack!
Shrimp & Sausage Paleo Skillet Meal

Ingredients
1 lb. medium or large shrimp (peeled & deveined)
1 (12 oz.) package of smoked sausage
1 red bell pepper – chopped
1 yellow bell pepper – chopped
1/2 sweet onion – medium diced
1/4 cup chicken broth
1 medium squash (or zucchini) – chopped
2 garlic cloves – minced
2 tsp Old Bay Seasoning
2 tbsp olive oil (or coconut oil)
Optional garnish: parsley- chopped
Optional seasoning: Salt, pepper & red pepper flakes
Directions
- Toss shrimp in a bowl with 2 tsp Old Bay Seasoning – set aside.
- Heat 1 tbsp olive oil in a large skillet over medium heat. Add shrimp & sauté about 4 minutes, turning after 2 minutes. Remove & set aside.
- Add onions & bell peppers to skillet with remaining tbsp of oil. Sauté for about 2 minutes.
- Add sausage & squash to the skillet – cook another 2 minutes, stirring periodically.
- Add cooked shrimp back to skillet along with garlic, stir to combine. Cook for 1-2 minutes to heat through.
- Add chicken stock to pan, and mix thoroughly to moisten.
- Add salt/pepper & red pepper flakes (if desired) to taste. Remove from heat, garnish with parsley & serve hot, with steamed rice if desired.
