These rich and creamy chips have bits of peppermint candy in them that will add holiday cheer to all your baking creations! (Delicious in hot chocolate too!) I always buy 2 or 3 bags when I see them! They can usually be found on @amazon or @target.

Peppermint Crunch Chocolate Cake Mix Cookies

1 boxed Betty Crocker Dark Chocolate or Chocolate Fudge Cake Mix (15.25 oz.)
1/2 bag of Andes Peppermint Crunch Baking Chips (5 oz}
2 eggs
½ cup Canola Oil
1 teaspoon vanilla extract
Directions
- Combine cake mix, eggs, and oil in large mixing bowl, and mix well.
- Stir in Peppermint Crunch Baking Chips
- Chill dough in refrigerator for 1 hour. Preheat oven to 350 degrees.
- Drop onto parchment lined cookie sheet in rounded balls. Tip: To achieve consistently sized cookies, use a 2 tablespoon scoop, and slightly flatten each ball with the bottom of a juice glass sprayed with non-stick spray.)
- Bake for approx. 7-9 minutes or until done.
Notes
- Pro tip: To get perfectly round cookies, rotate a round cookie cutter quickly around each cookie , right after removed from the oven.
