Oh, how I love fresh veggies from the Farmer’s Market!

It’s time to feature recipes starring these fresh flavors! Sweet corn & peppers, beautiful red tomatoes, juicy squash & zucchini & zesty citrus and herbs are making my taste buds sing!

This week’s recipes include:

Shrimp Diablo – Who likes it spicy?? This zesty shrimp recipe served over fresh corn, zucchini & onions, and served with creamy avocado fits that bill!

Roasted Veggie Puttanesca – This fresh vegetable pasta sauce becomes a savory, briny delight with the addition of mushrooms & Kalamata Olives!

Greek Pasta Salad – A light pasta salad loaded with summer veggies, Kalamata olives & feta in a homemade Greek dressing – perfect for summer lunches!
