A simple, creamy Indian spiced vegetarian dish that has so much yummy flavor-it may become a new comfort food staple!
I love the Trader Joe’s Masala Simmer Sauce, so I had to try to make that creamy, spicy sauce at home! This recipe from Beth at BudgetBytes was one of her 2019 Top 20 Recipes! And, the majority of the ingredients are already in your pantry! if you like Indian spices, you are going to love this! Serve in a bowl over rice and with some warm Naan to soak up that delish sauce!
Cauliflower & Chickpea Masala
Simple, creamy Indian spiced vegetarian dish has so much yummy flavor, and with rice & Naan makes this a new comfort food staple!
Ingredients
- 1 yellow onion - diced
- 3 cloves garlic - minced
- 1/2 TBSP fresh ginger - grated
- 2 TBSP olive oil
- 12 oz. frozen or fresh cauliflower florets
- 1 can chickpeas (15 oz.) drained
- 1 can tomato sauce (15 oz.)
- 1/4 cup water
- 1/3 cup heavy cream or sour cream
- Rice and Naan for serving
- SEASONING:
- 2 TBSP Garam Masala
- 1/2 TSP cumin
- 1/2 TSP tumeric
- 1/2 tsp. smoked paprika
- 1/4 tsp. cayenne
- 1/2 tsp. salt
- Pepper to taste
Directions
- Step 1 Combine all seasoning ingredients in a small bowl.
- Step 2 Add diced onion, garlic and ginger to a large skillet with olive oil. Saute over Medium heat until onions are translucent – approx. 3 minutes.
- Step 3 Add spice mix to skillet and continue to saute for 1 minute.
- Step 4 Add cauliflower to the skillet and saute another 5 minutes, until florets are heated and coated in spices.
- Step 5 Add drained chickpeas, tomato sauce and 1/4 cup water to skillet. Stir to combine, and simmer over Medium-Low heat for about 15 minutes. If mixture becomes too dry, add a couple more tablespoons water.
- Step 6 After sauce has simmered for 15 minutes, turn off heat and stir in heavy cream or sour cream.
- Step 7 Taste once combined and salt as needed. Serve over rice or with Naan. Enjoy!
