This recipe is the EPITOME of a #pantryrecipe! Santa Fe Stew is a spicy tomato based chicken stew, using mostly canned beans, corn, potatoes, chicken.  Which may sound boring, but it’s the seasoning recipe that will make this stew your new favorite #pantryrecipe!

The credit for this one has to go to my husband -😘 He’s been making this for years, and it’s my parents’ favorite! especially with some fresh Jiffy Cornbread muffins! (Another required pantry staple! )

While 80% of the ingredients in this stew are canned items, there actually are a few fresh veggies in it! The recipe may look like a lot of ingredients, but I am pretty sure you have most of the spices and the canned goods in your pantry already! It couldn’t be easier!!

Santa Fe Stew is a delicious tomato based chicken stew, using mostly canned beans, corn, potatoes, chicken and fresh onion, celery & green pepper. Which may sound pretty routine, but it's the seasoning recipe that will make this stew your new favorite #pantryrecipe!

Ingredients
  • 1/2 cup sweet onion - chopped (1/2 an onion)
  • 1/2 cup celery - chopped (3 stalks)
  • 1/2 cup green pepper - chopped (1/2 of a pepper)
  • 2 -12 oz. cans chicken breast (Tyson Grilled)
  • 14 oz. can diced tomatoes
  • 10 oz. can diced Rotel tomatoes
  • 8 oz. can tomato sauce
  • 15 oz. can sliced potatoes
  • 1 can Cream of Celery soup (10.75 oz.)
  • 1 can Cream of Chicken soup (10.75 oz.)
  • 1 can Pork & Beans (16 oz.)
  • 1 can niblet corn (11 oz.)
  • 1 can lima beans (15 oz.)
  • 1 (4 oz.) can diced green chilies - (optional)
  • SEASONING:
  • 1 tsp cumin
  • 1 tsp. chili powder
  • 1/2 tsp. oregano
  • 1/2 tsp. paprika
  • 1/2 tsp. coriander
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • 1/8 tsp. black pepper
  • 1/8 tsp. cayenne pepper (optional)
Directions
  • Step 1 In a dutch oven/stock pot, sauté onion, celery & green pepper in 1 TBSP olive oil over Medium heat until softened (approx. 3 minutes)
  • Step 2 Then add all of the remaining ingredients to the stock pot – cook 15-20 minutes over Medium heat until heated through, stirring occasionally to prevent sticking. Serve with cornbread and garnish with sour cream and avocado if desired!
  • Step 3 NOTE: Feel free to use shredded rotisserie chicken instead of canned – that just makes it yummier!
