Meatballs are such a simple food, but they bring such joy & comfort! I ask you – who doesn’t love spaghetti & meatballs? Last year, when my dear friend Sara and her 2 teenage kids came to stay with us, this was THE food that they had no problem gobbling up!
These are super simple, freeze wonderfully, and if you have ground beef or sausage on hand, you probably already have all of the other ingredients!
Italian Meatballs
Versatile and tasty Italian meatballs are easy to whip up and freeze easily to keep on hand!
Ingredients
- 1 1/2 LBS ground beef
- 1/2 LB Italian sausage - ground/casings removed (it unavailable just use 2 LBS beef)
- 1 cup fresh bread crumbs - (approx. 2 slices of bread - torn up with my hands)
- 3/4 cup grated Parmesan cheese
- 1/2 large onion - finely chopped
- 3 cloves garlic - minced
- 2 large eggs
- 2 TSP dried Oregano
- 2 TSP dried Basil
- 1-1 1/2 TSP kosher salt
- 1/2 TSP ground pepper
- 1 TBSP vegetable oil
Directions
- Step 1 Preheat oven to 400 degrees and line a large sheet pan with non-stick foil.
- Step 2 Combine all ingredients in a large bowl (except vegetable oil)
- Step 3 Mix with your hands until combined
- Step 4 Form mixture into 1 1/2 inch meatballs (about the size of a golf ball – an ice cream scooper is a great tool for this)
- Step 5 Drizzle with vegetable oil and then bake for 20-22 minutes until lightly browned. Note – the parmesan cheese will ooze a little around the meatballs – not to worry!
- Step 6 Serve with your favorite sauce and pasta or zoodles or make yourself a epic Meatball Sub! Note: serving size with large meatballs is 2-3 per person and recipe should make about 14 meatballs!
