Ingredients

  • Rice Mixture
  • 1 ½ cups long-grain white rice

  • 2 ¼ cups chicken broth

  • 1 tablespoon butter

  • 2 teaspoons rice vinegar

  • ½ teaspoon kosher salt

  • 24 frozen dumplings (potstickers)

  • 2 cups broccoli or broccolini – cut into bite-sized pieces

  • Soy Ginger Sauce
  • 5 tablespoons soy sauce (or coconut aminos)

  • 4 tablespoons extra virgin olive oil

  • 1 tablespoon Gochunjung paste

  • 1 tablespoon rice vinegar

  • 2 teaspoons garlic – minced

  • 2 teaspoons fresh ginger grated

  • 2 teaspoons honey

  • 1 teaspoon sesame oil

  • 1 teaspoon chili garlic sauce

  • Spicy Mayo
  • 1/3 cup mayo

  • 3 teaspoons Sriracha

Directions

  • Preheat the oven to 375°F. Spray a large casserole dish with non-stick cooking spray. Combine 1 ½ cups long grain white rice, 2 ¼ cups chicken broth, 1 tablespoon butter, 2 teaspoons rice vinegar, & ½ teaspoon kosher salt in the prepared casserole dish. Stir to combine.
  • Place 24 frozen dumplings (potstickers) & 2 cups broccolini on top of the rice mixture. Cover with aluminum foil (try to tent it a little so the dumplings don’t stick to it when you take it off) and bake for 50 minutes in the preheated oven. While dumplings bake, put all of the sauce ingredients in a mason jar, cover, and shake. Mix up the spicy mayo if you plan to use it.
  • After 50 minutes, remove from the oven and remove the foil. Drizzle the top of the casserole with the sauce and then spicy mayo. Enjoy with any other toppings, such as green onions or sesame seeds.

Notes

  • Dumplings: Target and Trader Joes have a great selection of Potstickers that are perfect for this recipe.  
    Sauce: Feel free to substitute any store-bought stir-fry sauce to simplify this recipe.
