Mini Chicken Meatloaves with Broccoli

In this recipe, ground chicken is transformed into individual size meatloaves, that are reminiscent of Chicken Parmesan! 🙂 Yummo! Are you excited now? How about when I tell you the entree and the veg can all be cooked on one pan, our friend, the Sheet Pan? I thought you would be!  I also added some ready-made mashed potatoes to round out this meal.  Enjoy!

In this recipe, ground chicken is transformed into individual size meatloaves, that are reminiscent of Chicken Parmesan! and all is cooked on our friend, the Sheet Pan!

Ingredients
  • MEATLOAVES:
  • 1 LB ground chicken
  • 1/4 C chopped fresh parsley
  • 1/3 C finely chopped white onion
  • 2 TBSP plain breadcrumbs
  • 1 TSP paprika
  • 1 TSP kosher salt
  • 1/2 C grated Parmesan cheese
  • 3 cloves garlic - minced
  • 2 scallions - finely chopped
  • 1 slice of bread - cut into tiny cubes
  • 1 egg - whisked
  • MEATLOAF TOPPINGS:
  • 1 C favorite pasta sauce
  • 4 slices Provolone (or Mozzerella) cheese
  • VEGETABLE:
  • 1 bag of broccoli florets
  • 1 lemon - zested and cut into wedges
  • 1/2 TSP garlic powder
  • 2 TBSP Olive oil
Directions
  • Step 1 Preheat oven to 375 degrees and line a Sheet Pan with non-stick aluminum foil
  • Step 2 Add ground chicken to a large bowl and set aside. Separately mix together the next 11 ingredients until blended.
  • Step 3 Add to the ground chicken and mix with your hands until combined.
  • Step 4 Form into 4 equal loafs and place on lined Sheet Pan – set aside.
  • Step 5 In another bowl, combine broccoli florets with lemon zest, garlic powder, olive oil and salt/pepper.
  • Step 6 Add the broccoli to the other end of the Sheet Pan with the meatloaves.
  • Step 7 Bake for 30 minutes, then remove from oven.
  • Step 8 Remove broccoli from pan and keep warm.
  • Step 9 Top each meatloaf with slice of cheese, and spoon pasta sauce over each loaf. Return to oven for 15 minutes or until they reach 165 degrees.
  • Step 10 Squeeze lemon wedges over broccoli and serve with meatloaves.
