That’s it, ya’ll! These 3 meals only require ONE pan! Either a Sheet Pan or a Skillet! Only ONE pan to clean up – Hallelujah!🙌

ALSO, all 3 of these recipes come from my favorite cookbook, Gina Homolka’s, Skinny Taste: One & Done.  I’m kinda obsessed with this cookbook and her recipes. Especially because this book contains 140 recipes all just for dinner, and made in ONE pot or pan – which is the theme of the week!  If you’ve been reading my blog for a while, you know that’s totally my kinda cooking!  Get yourself a copy here!

Mediterranean Shrimp & Couscous – Tasty shrimp & Israeli couscous (the larger, more pearl-like variety), are elevated  by the fresh Mediterranean flavors of lemon, olives, feta & capers!  It’s super easy, and crazy good! All in one non-stick pan!

Chicken & Shredded Brussels Sprouts Bowls – Shredded Brussels sprouts take on all the Chinese takeout 🥡 vibes in this recipe – sautéed with ground chicken, carrot, bell pepper, mushrooms, ginger & soy sauce.  So good, you won’t even miss the rice!

Pesce PrimaveraPesce Primavera is simply fish & lots of colorful veggies roasted together.  Add a squeeze of lemon juice, a little summer basil & a dusting of grated Parmesan, to make this dish complete & full flavor!
